The Columbus is a hand-built replica of a 16th-century Spanish galleon, finished in warm varnished hardwood with twin masts and crimson cross sails that make it one of the most photographed boats on the Nichupté Lagoon. The evening unfolds at a relaxed pace: a welcome cocktail at the dock, a two-and-a-half-hour cruise around the calm lagoon as the sun sets behind the Cancun skyline, and a candlelit surf-and-turf dinner served on deck while a saxophonist plays. With a national open bar and a master of ceremonies aboard, it works equally well for an intimate couples' night or a private celebration of up to seventy guests.
